
I guess this would be my very first blog entry. More than anything, I love to bake cupcakes... cakes, too, but cupcakes are my first love and they're so individualized and delicious :)
Basically, I just want to share recipes I've tried and document new designs I want to make and have made in the past.
I found a cupcake supply website tonight called Wilton (www.wilton.com I think), which I'm sure is pretty well-known, but new to me. I've never tried fondant or used pastry bags to decorate so I definitely want to try it out and feed my cupcake-loving friends beautiful cupcakes. I'm not sure, and I'd have to look, but I think fondant might have gelatin in it, which in that case, I can't eat it (I'm a vegetarian), but I can still create with it and give them out.
The next recipe I'm trying is one that a co-worker sent me. Violet cupcakes! Shocking, I know.
Here is the recipe I will be attempting:
For the cupcakes
Makes 12
1/2 cup butter
3 tbsp sugar
1/4 tsp salt
3 tbsp violet syrup
1/4 tsp vanilla
2 eggs
3/4 cup flour
1/2 tsp baking soda
2 tsp baking powder
3 tbsp milk
Preheat to 400F
In a large bowl, mix the butter, sugar, salt, violet syrup, vanilla and eggs with an electric whisk until thickly combined.
Then, sift into the bowl the flour, baking soda and baking powder, and continue to whisk again until well-combined.
Add the milk and whisk for 2 mins until you have a thick batter.
Bake for 15-20 mins
For the frosting
1 cup butter
6 tbsp violet syrup
1/4 tsp vanilla
2 tbsp milk
2-1/2 cups confectioners sugar
8 drops violet coloring
With an electric whisk, mix all ingredients together, adding the confectioners sugar little by little until you have a smooth frosting.
Add the violet coloring a drop at a time while whisking until you get the color you want.
